Meet Scott Bridi, the chef/founder of Brooklyn Cured, a sustainably-focused, artisan charcuterie business based in Brooklyn, New York. Scott got his start in handcrafted meats while running the charcuterie program for Gramercy Tavern – falling in love with transforming the flavor of meats while creating bacon, ham, sausages, terrines, pâtés, and confits for the restaurant. Scott feels like the time is right to introduce a product like his on a bigger scale and show people the creativity and interesting new textures and flavors that he wants to bring to local kitchen tables – a “modern” twist to something he’s grown up on in Brooklyn.

On January 9th, you can find Brooklyn Cured at The Foodshed Market at the Brooklyn Commons at 388 Atlantic Avenue between Hoyt and Bond Streets, and beginning on January 8th at The Brooklyn Flea.
