Follow this “day in the life” story of what it’s like to be invited to host a dinner at The James Beard House in New York City with Executive Chef James Holmes of Olivia Restaurant in Austin, Texas (selected as one of Bon Appetit’s 10 Best New Restaurants in 2009).
Chef Holmes brings his Austin-style, farm-to-table, nose-to-tail eating to James Beard’s kitchen to show us “Yankees” how Texans now like to eat. It’s an experience he and his staff couldn’t be more proud of, the one goal that means the most, the invitation of a lifetime…

I loved that I was there for that little moment… I think many of us forget what a huge honor it is to get to cook at The JBH. And yes, for me the pig’s ear panini was a highlight! I also loved the bison tartare and the risotto w/the rack of lamb. Oh and the white chocolate mousse. I can go on and on here… Thanks everyone for stopping by!

Can you capture an entire evening’s events in just a few short minutes? Absolutely!! What an experience. Honor, gratitude, exuberance, passion; all were captured just as all of us felt it. I for one couldn’t for the life of me quit smiling. Working in pastry, I get a sort of bird’s eye view to see what these guys do with savory food. It’s amazing. I couldn’t be more pleased and appreciative to see and taste what they put forth. They truly care, it truly shows, and I have nothing but respect for the entire Olivia staff. A heartfelt thanks to Mr. James Beard’s house and its impeccable staff (all caps!), an amazing videographer in Miss Liza, and, of course, Chef James n Kristina, Big Jim n Sheryl, Jerry, Chef Andrew, the sous extraordinares Jacob n Sarah, Vol. Laura, and all of Olivia.
