		<description>Thanks for the video.  Great to see some insight into this operation and the philosophies of the owners.  I&#039;ve had a few products from them and they are very good.  I feel like there&#039;s a bit of attitude in their retail operation (maybe they get a lot of annoying customers?) so I&#039;ve been hesitant to ask a lot of questions while shopping there because they seem put off by it, and there&#039;s really no printed information in the shop to inform you of their practices or sources of their product.  It really felt more like some sort of trendy hipster locavore haunt than a traditional neighborhood butcher, but I&#039;m glad to find this video and see that it&#039;s not really so.  Hopefully as they get established it will become a more friendly place to shop.</description>
